Caciotta di Bufala is made from the milk of the Italian Mediterranean Buffalo - a type of water buffalo. This cheese has a soft texture reminiscent of chèvre but it's taste is fresh and delicate with a pleasant, gamey aftertaste from the slightly acidic bufala milk.
Try with a Rosé or a light red wine such as a Pinot Noir
