Morocco is a soft cow's milk cheese made in the Veneto region of Northeastern Italy. The milk for this cheese comes from cows grazing in the mountain pastures around Mount Grappa. The skimmed milk from the evening’s milking is mixed with whole milk from the next morning milking. Morlacco is creamy, sharp, has hints of blue and an intense aroma. It is aged less than 30 days.
Serve with pepper and olive oil, with gnocchi or simply as a table cheese.
