Blue Wedge
Description
This is a handcrafted blue, made in partnership with 3rd generation Wisconsin cheese makers. It’s blue veined, salty and “feta-like”. It has a crumbly texture that is marbled with bluish-green penicillium mold. It is aged for four months. Pairings Sherry or Port Uses Serve with fresh figs, crumble over salads or use in dips. Milk
